  • 2 tomatoes, roughly chopped
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 spoons tomato paste (optional)
  • 2 vegetable or beef bouillon cubes (optional)
  • A pinch of sugar
  • Salt and pepper to taste
  • Cooking oil for pan-frying
  • Water for cooking

Instructions:

Step 1: Boil the Matumbo

  1. Place the cleaned and chopped Matumbo pieces in a large pot.
  2. Add the minced ginger to the pot, which will infuse a lovely flavor into the Matumbo.
  3. Cover the Matumbo with enough water and bring it to a boil.
  4. Reduce the heat to a simmer and cook until the Matumbo is very soft. This may take about 1-2 hours, depending on the thickness of the Matumbo pieces.
